Weekly Meal & Fitness Plan Dec 31st:

 Starting the New Year off Right

This weeks meal plan:

  • Monday : New Year’s Eve: Appetizers at Jenny’s House
  • Tuesday : Skillet Sweet Potato, Sausage, and Spinach Hash
  • Wednesday : Crockpot shredded BBQ with Stubbs BBQ Sauce:  Stubb uses only  finest natural ingredients. That’s why Stubb’s line of sauces, marinades and rubs are all natural, gluten-free, and contain no high fructose corn syrup.
  • Thursday : Chicken and Shrimp Stir Fry with Brown Rice
  • Friday:  Breakfast (Who doesn’t love breakfast for dinner?)
  • Saturday: My Work Party
  • Sunday:  TBA

Fitness Plan:

  • Monday:  Gym with my sis- Cardio & Biceps
  • Tuesday:  Gym with my sis- prob work on legs & Cardio
  • Wednesday:  Crossfit
  • Thursday:  Crossfit
  • Friday:  Gym- Not sure what I will work on yet, depends on what we did in crossfit
  • Saturday: OFF
  • Sunday:  Crossfit

Sunday night for Dinner we had turkey burgers with a fried egg on top, with homemade sweet potato fries, yuuuum!

After dinner I made a cheese ball that I am taking to our friends house for NYE along with all the sweets I made, such as Red Velvet Cake Pops (or balls, since they aren’t on a stick) and cookies.

I got the cheese ball recipe from Becky and it looks awesome. I can’t wait to try it. It has to chill in the refrigerator overnight, and gets rolled in chopped pecans later.

Not my Grandma’s Cheeseball 😉


  • Makes 1 Cheeseball
    • 8 ounces cream cheese, at room temperature
    • 10 ounces Old English Cheese (I only had 5 ounces, so that’s what I used)
    • 8 ounces sharp cheddar, shredded
    • 1 jalapeno, seeded and minced
    • 1/4 cup onion, minced
    • 1 tsp Worcestershire sauce
    • 12 ounces pecans, chopped


    Mix all ingredients (except for pecans) in a mixer (I used a hand mixer) until well-blended and creamy. Wrap in saran wrap and store in refrigerator 6 hours or overnight. Roll in pecans and serve with whatever you like!

For dessert I had some blackberries and blueberries, topped with cool whip.

If you didn’t know, I have been trying to watch my carb and sugar intake so a sweet treat with little sugar is cool whip.  2 tbsp only has 3 grams of carbs and 1 gram of sugar!  You can use this as a topping on fruit, or anything really! (Since I already killed the sweets department with cookies and cake pops)

Healthy Point of View (POV): No-Sweat Metabolism Booster:


A study from the Journal of the American Medical Association found that people who were fed a low- carb, high-protein diet burned 300 calories a day more than those on a low-fat diet, even though they were consuming the same number of calories.  This is what I try to include some protein in every meal and snack 🙂

Good Sources of protein:

  • Fish
  • Poultry
  • Red meat
  • Eggs
  • Nuts
  • Nut Butters
  • Seeds
  • Beans
  • Lentils
  • Milk
  • Milk products
  • Yogurt

Even on my “OFF” days I still like to drink a protein shake or include protein in my meals because my muscles are still recovering and rebuilding from the previous days at the gym.


This morning  before I hit the gym I attempted making a veggie omelet.  I feel like I was skimpy on the veggies yesterday so this morning I had to make up for it.

In it was 2 eggs, 2 egg whites, cheese. broccoli, turkey bacon, and orange pepper.  On top: rosted tomatoes, and avocado. Delicious!  It made enough for two people, so I saved some.

1/2 of a grapefruit on the side.

PS. Grapefruit is sooooo good for you!  This fruit is a metabolism booster and the compounds in it aid in FAT BURNING!  One large grapefruit has only 53 calories!

Oh Sunday, How I love thee!

For breakfast today I had another paleo pumpkin muffin with peanut butter, quick and easy before I headed to crossfit!  I also had some almond milk, straight from the carton!  I’m the only one in the house who drinks it so I am allowed 🙂

Since I am new to crossfit I have to take the beginner classes, and today I was the only one in the class so I got like a one on one training session which was pretty awesome!

I learned:

Pull Ups – Kipping and with the band

Shoulder Press, Push Press and Push Jerks (or snatches)

Box Jumps

I feel like I did pretty good, especially learning how to Kip correctly.


3 Rounds of 5,10,15

My heart rate at the peak was 180!  I thought I was going to die 🙂  I burned 649 calories!

After Crossfit I had my Beverly International chocolate protein shake.  It has 120 calories, 4 grams of carbs, and 0 sugar in one scoop.  I just had it with ice and water this morning and it was very good!

During the time of deciding what I was going to eat and actually eating, I had the last two of my power balls!  I need to make some more obviously!

 A little while later I made a microwaveable English muffin sandwich with one slice of turkey, an over easy egg, and the laughing cow cinnamon cream cheese.  Also a side of blueberries.  I  got this recipe from Tina and I make it at least twice a week!



New Year’s Resolutions:

After lunch I decided that one of my New Year’s Resolutions would be to drink more water!  I think this is manageable 🙂  So I started today:

Also, since I was a bad neighbor and didn’t get my neighbors anything for Christmas I decided to make red velvet cake pops and cookies for NYE.  I got cookies, wine, and bread from our awesome cul de sac of friends.

 I will take some to our friend’s house tomorrow that we are celebrating at and I will give some to the neighbors.

I ate a gooey delicious cookies while I was baking, I just had to.

For the Cake Pops:

I made two red velvet cakes and baked them in the oven for 30 minutes or so.  Let them cool on a wire rack.  After they are cool, mix in the icing.  You WILL have to use your hands here, and you will get RED stuff everywhere!

I have white chocolate and milk chocolate to dip the balls in 🙂

I sprayed my hands on and off with non stick cooking spray to make rolling the balls easier. Your hands will be red.  Look who followed me around the kitchen the whole time!

I used a spoon to help dip each ball into the melted chocolate.  Lay out onto wax paper, and let cool. Wala, you are done!   I also HAD to try the cake pops, just to make sure they tasted okay. I can’t give the neighbors gross cake pops 😉  Don’t mind my chipped nail!

That’s the end of my sweets for the day.  The cake pops are pretty rich.
