Happy Weekend!  I hope you all have a good and long one like me!

This morning I work up and had oatmeal for breakfast. I was out of eggs and I really need to go to the grocery store so I can plan my weekly meals.

Blueberry Oatmeal:

  • One packet plain oatmeal
  • Water
  • Unsweetened Almond Milk
  • Cinnamon
  • Stevia


  • Honey Almond Flax cereal for crunch
  • Blueberries
  • Pecans

I drank my pre workout White Flood on the way to the gym.


I went to the gym thinking I was going to work on triceps and I was also going to do a short full body circuit. I had my circuit all written up and ready and when I got there I totally changed my mind!  I still worked on triceps, but I decided to do a burpee challenge too!

I did a total of 60 burpee’s today. I was going to do a 100 burpee challenge, but I’m sure I will work my way up 🙂 Be looking for it!

After the gym I drank my Beverly International chocolate protein shake with 1/2 almond milk and 1/2 water.

I had a small lunch since I knew we were meeting friends to watch the UK game and I would be eating again in a couple of hours.

So I had a paleo pumpkin walnut muffin with peanut butter. I love these and it’s just a perfect combination.  I also had a handful of cashews.

We went out with our friends Nick and Lindsey to Keystone to watch the UK game.  They lost by 3 points 😦

Keystone is known for their mac n cheese so everyone got it besides me of course.  They have a separate mac n cheese men

u and you can customize it however you want.  Eric got “Nirvana” which had chicken and roasted red peppers, but I did have a few bites.  I got the chicken quesadilla with ranch for dipping!

Lindsey and I decided we were going to be festive and try the fruity beers.  Not a good idea since we only liked two, but we wanted to be adventurous!

I had the “Magic Hat” which was pretty good. It had a spicy taste, but not too spicy.  Then we ordered the banana bread beer which literally tasted like I was drinking banana bread, it was crazy. Too weird for a beer.  And then we tried the ginger beer, which was SUPER strong and gingery.  I only took a few sips.  Lindsey finally got a Raspberry Ale and it was good!  So we like 2 of 4, not too bad I guess.

When I got home I wanted something sweet so I broke into the cookies and after reading a couple other blogs about hot chocolate I decided to make some for myself!

I had two, well actually three cookies, and I only drank half of my hot chocolate… MMMM whip cream!

My husband fell asleep playing X Box- Boy are we getting old!

Off to bed here soon so I can wake up bright and early for CROSSFIT!  Talk about getting old 😉

Thursday night for dinner I had a spaghetti squash bowl.

 In the mix was spaghetti squash of course:  I microwaved the squash just to soften it a bit.. Cut in half and scoop out the seeds.  Drizzle olive oil and salt and paper on top.  Lay on a sheet pan rind up in the oven for 45 minutes to an hour.

Also in the mix, rotel tomatoes (mild). I am not a HOT kinda girl. And some leftover sausage and chicken.

It was pretty tasty, but the rotel was not my favorite.

We also had some carrots n yogurt ranch dip

For dessert, I had two POWER BALLS!  You really need to make these ASAP.  Next time I will double the batch because my husband loves them too meaning they are almost gone!

For breakfast Friday I had a Microwaveable English Muffin that I borrowed from Tina. You could probably use a variation of coconut flour and almond flour for fewer calories but I made mine with almond flour only.  I figured out that it has approx 270-280 calories depending on how much butter you use.

  • 1/4 cup almond flour
  • 1 egg
  • 1 tbsp melted butter (I used smart balance)
  • 1/2 tsp baking powder
  • pinch of salt

Mix ingredients together in a bowl.  Spray a separate bowl with non stick cooking spray (I also use smart balance) and pour in the batter. 

Microwave for 90 seconds.

Allow English muffin to cool and cut in half.

I like to toast mine 🙂

It tastes wonderful and buttery and only has 6 grams of carbs!


I made an egg sandwich with 1 egg and 2 egg whites with laughing cow cinnamon cream cheese! If you haven’t noticed, I am obsessed with this cheese!

I took my almond milk and sandwich to go, shh I didn’t eat it in the car 🙂

For a snack around 11 am I had a paleo pumpkin walnut muffin. So filling!

For lunch around 2:30 I had a tuna patty with ketchup. (I know tuna doesn’t usually look that pretty, sorry) Its hard taking good-looking pictures in the break room at work 🙂



  • one can of tuna
  • one egg
  • 2 tbsp coconut flour
  • (next time I will prob only use 1 tbsp- It was a little dry)
  • salt and pepper to taste
  • garlic powder
  • onion powder
  • * Somtimes I add chopped spinach, and onions. You can add anything else you like!
  • * Sometimes I make mine with oats instead of flour also.

I also had some cauliflower and yogurt ranch dressing.  Also in the mix- a handful of mixed nuts (almonds, cashews, pecans)

Snack around 5:00

2 power balls, again. I think they are gone now, so sad.

For dinner we had chipotle, my favorite! I get a salad with just a small scoop of brown rice, chicken, and cheese.

After dinner we watched TED. This is one of the funniest movies I’ve seen in a long time.
