What a Great Day to celebrate National Peanut Butter Day!!

I know my dogs love it!

It’s always a good day to celebrate peanut butter!   Here are some awesome recipes that I have either come up with or borrowed from others and LOVE!

Wednesday was another 10 hour day at work…So on the way to work I had “oatmeal breakfast parfait in an almost empty almond butter jar 🙂  Yes, I know I eat and drive way too much!

Drizzle your protein mixture on top: Protein powder mixed with water to form a thin pudding like texture.

This is one of my favorite breakfasts so far!

My new Wildtree Products are my favorite to cook with!   I can make so many new foodie items with them!  I should be a rep 🙂 All of the products are organic and they don’t have any of that added crap!

Snack #1 Fitmixer vanilla protein + PB2


For lunch I packed a big veggie salad with  a little sprinkle of feta cheese- what was left in the fridge…  I made some dressing which was a mixture of pesto grapeseed oil and Pesto that I made on Monday night.


I also had some talapia or as my mother in law would call it –  “talap”

So of course I walk into the conference room at work and this wonderful looking cake stares me in the face!



No I didn’t cheat!  Still no sweets for this girl, and I am feeling great!  I will beat this 30 day challenge!

Anyway…… while my husband was cooking up a storm in the kitchen, I made some roasted sweet potatoes while the oven was on.

So that was my snack: sweet potatoes with almond butter!

I also had a greek yogurt- I was starving!

After work I had to get my WORKOUT on!!

So I headed to crossfit.  I was actually pretty excited for the workout.  I usually look ahead online to see what the WOD is and If I don’t feel like going,  I will do my own thing.


#1) Front Squats 5×2 @ 85%
Rest 1 Minute between Sets

#2) 3×8 Good mornings (Increase Weight Each Set)

#3) WOD:

50 Ab Mat Sit Ups then:

3 Rounds for Time:

10 Deadlifts 225,155
20 Wall Balls
30 Lateral Jumps Over Bar
Followed By:
50 Ab Mat Sit Ups

It took me 15 minutes to finish- It was a great workout!

Wildtree Italian Chicken Tenders

I put mine with 2 scrambled eggs, garlic and herb laughing cow cream cheese, tomatoes, and avocado.

Dessert was a piece of my protein oatmeal loaf with Protein Icing– this time Macadamia Nut flavor.

The only difference between this icing and the honey pecan pie protein icing is the flavor of coconut butter that I used!   Lots of protein in this meal:  about 20 grams!

Which reminds me I need to hit up Nikki’s store online and buy some more 🙂  These coconut butters only have 3 grams of sugar in 2 tbsp!


I think this is becoming my favorite breakfast, snack, snack, and snack again 🙂

Snack time!

So you know me and protein are two peas in a pod right?!

For a snack, I though I would experiment and I came up with this:

Honey Pecan Pie Protein Icing

Heat coconut butter in microwave in intervals of 15 seconds until warm-  set aside

**Note:  this kind of coconut butter does not melt completely!


Mix about 1/2 scoop of vanilla protein powder with water, small amounts at a time, until a smooth consistency forms.  You don’t want it too thin.

Slowly add coconut butter to protein mixture and rotate adding in water and coconut butter until a thicker, smooth icing forms.

May warm in the microwave for another 10-15 seconds.


Enjoy the melty goodness!

Drizzle over anything:  Fruit, pancakes, oatmeal, french toast etc…

Or just eat straight from the bowl 🙂

Anyways, on to breakfast which was another star meal 🙂   I drank my hot tea in my Wonder Woman Mug on the way to work

and then I ate this at work :

Protein Oatmeal loaf  with melty almond butter and blackberries….

I nuked the entire dish in the microwave for about 20 seconds.

The blackberries and almond butter together was divine!

After working 12 long hours, I didn’t get to the gym, but it was my scheduled off day for that very reason 🙂

My husband had an awesome dinner prepared for me when I got home though, thanks to Wildtree!

And we finished off some wine 🙂


I also had a brownie in a mug…and this time I used a whole egg white and it was so moist and delicious!  I also used baking powder instead of baking soda.  YUUUUM (and only like 3 grams of sugar!)
