I am doing a lot of catch up, so buckle up! This weekend was full of good eats and workouts! Check it out.
Crossfit kicked my butt Friday and Saturday. Just take a look at these workouts!
Friday:
Filthy Fifty
50 Box Jumps
50 Jumping Pull Ups
50 KB Swings with 35# KB
50 Walking Lunges
50 Knees to Elbows (I substituted ab mat situps)
50 Push Press – This was the hardest for me!
50 Back Extensions
50 Wallballs
50 Burpees
50 Double Unders
I knew when my legs were already hurting at BOX JUMPS that it was going to be a long workout. The target time was 35-45 minutes and I did it in 36:34
Saturday:

Saturday night’s Dinner was Jamie Eason’s Turkey Meatloaf Muffins (with a few additions and subtractions of my own)
With Cheesy Sweet Potato Crisps from How Sweet It Is
Cheesy Sweet Potato Crisps
Ingredients:
2 sweet potatoes, peeled
2 egg whites
1/2 cup parmesan cheese
1/2 teaspoon rosemary
1/4 teaspoon pepper
Directions:
Preheat oven to 425. Set a wire rack on top of a baking sheet. Spray rack with non-stick spray. (I actually forgot this step-woops)
Grate sweet potatoes (I used a food processor) and squeeze all the moisture from them. Less moisture= crisp up better in the oven.
Add sweet potatoes, egg whites, cheese, pepper, and rosemary in a large bowl and mix until combined.
Scoop out 1 tablespoon of potato mixture (I used an ice-cream scoop) and set on wire rack. Press as thin as possible. Repeat until potatoes are gone.
Bake for 20-30 minutes, or until potatoes and dark around the edges and crispy.

Lunch was leftovers, which is always good for me!
Small salad (lots of veggies) with a turkey meatloaf muffin. Kept it light before going to Crossfit.
Crossfit on Sunday was a little bit more laid back, thank God. We worked on our 5 rep max deadlift.
I snacked on some UMP Vanilla Protein, an apple, and a paleo pumpkin walnut muffin , and some Pecan Nut Thins throughout the day!
