Good Morning and Happy Easter!

I just wanted to pop in quickly this morning before I head out to church and to spend time with the family.

happy easter

Isn’t this such a pretty flower!?  I love it.

Easter, which celebrates Jesus Christ’s resurrection from the dead, is Christianity’s most important holiday, which is today!

Christians believe that Jesus was raised from the dead, three days after his death on the cross. As part of the Easter season, the death of Jesus Christ by crucifixion is honored on Good Friday, the Friday before Easter. Through his death, burial, and resurrection, Jesus paid the penalty for our sin, thus giving eternal life to those who believe.

However you spend your Easter I hope it is a good one!

I’ll be back later!

What Kind Of Sweeteners Are Considered Paleo?

I’ve really been into Paleo dishes lately.  Now I do not follow 100% thats for sure, like I mentioned before.  I mainly love Paleo dishes because I feel like I can eat desserts, still in moderation of course!

Whenever I make something my family always jokes around and says, “Is this Paleo?”   I like to use Stevia in dishes, and this sweetener is supposed to be used in moderation according to Paleo, but raw unprocessed honey is acceptable too.  If I can get away with out using sweetener at all, like in my tea I will try to do that..but in baking I think a little sweetness is needed.

Just Like Sugar Table Top – Natural Chicory root fiber” is an accepted Paleo sweetener also but I have never seen or heard of it until now.  You can buy it on Amazon or Vitacost.  I really want to check it out!

For sweetness is this bread I’m about to tell you about, I used 1 tbsp honey, and 2 drops liquid Stevia.

I made this bread on Wednesday and It was gone by today!

** Almond flour absorbs moisture more than normal flour- therefor squeezing out the excess liquid from the zucchini is essential.  Baking times may vary.

A lot of whole wheat recipes can be made Paleo by using almond flour instead of whole wheat flour but A cup of almond flour also differs significantly in weight from a cup of wheat flour.  It is not a complete 1:1 Ratio.  Don’t get me wrong I still like using whole wheat flour in some recipes.

“Almond flour is ground nuts, full of fat and moisture, entirely without gluten and not nearly as powdery, fine and dry as wheat flour.  So there are a whole range of factors you need to account for when adapting a wheat-based recipe to low carb and gluten-free. ”  Source
