Yesterday morning I was in a bit of a hurry before I headed to crossfit, so breakfast came together in no time!
Kashi Cinnamon Oats Cereal with Almond Milk
Look at the hearts…
I broke a good sweat at crossfit then headed to meet my friend Lindsey and her adorable baby for lunch. We went to one of my all time favorite places, Bellevue Bistro!
I started with the veggie chili, which was pretty good but I didn’t eat it all. It was filled with chickpeas, beans. onions, and zucchini.
I wanted to save room in my belly for the star of the show which was my Cleveland Salad. I think I get this almost every time I go there!
I asked for added tomatoes and avocado too 🙂
After lunch I headed to my sister’s house to let her dogs out. She has two very sweet pitbulls! Since my sister is gone at the police academy Monday through Friday we try to help her as much as possible.
Knuckles misses his mommy!
When I got home a FUN package was waiting for me! Artisana Organic Foods sent me a package of their nut butter sample packs to go!
These nut butters are 100% Organic and Omega 3 Enriched! They are made in a way these essential fatty acids, enzymes, vitamins, and minerals are preserved.
- Non-animal proteins and enzymes
- Vitamins and Minerals
- Essential fatty-acids (including Omega-3, of which Walnut butter has the most)
- Fiber in all products more readily digestible than whole nuts…making them truly whole foods.
- Certified Kosher (KSA)
- Peanut Free, Gluten Free, Dairy Free, Soy Free
They have 5 different flavors: Phyto Plankton, Goji and Milk Thistle, Berry Antioxidant, Blue Agave, and Acai Berry. I am very intrigued by all of these.
These things are AWESOME. I immediately dove into the Acai Berry and dunked my Oatmeal Blueberry Banana Muffin in it! What a great combo! PS. Muffin Recipe to come soon 🙂 You won’t want to miss it.
These little packs are so convenient if you are on the go like me! Put them in your purse or gym bag, or in kids lunches. Some other ways to use these nut butters are to spread them on fruit, stir into cereal or yogurt, squeeze into a smoothie, or eat it straight from the pack!
Now it is your chance to win a gift pack of Super Foods. One FCC reader will receive a sample package with 1 of each flavor.

This week’s meal plan will be pretty tentative. I’m not really sure what I’m craving as I’m making this menu so it might change a bit 🙂
Here is the menu so far:
Monday: Laura’s Lean burgers with sweet potato tots
Tuesday: Taco Salad- Ground turkey
Wednesday: Pizza for boys- I’ll whip something together after crossfit
Thursday: Coconut Chicken
Sunday– Semi California Chicken Quesadilla?
I didn’t do a whole lot of meal prepping this weekend except for a few usual things that I like to have on hand to take for lunches.
I did make an awesome Oriental Chicken Salad though:
- 1 bag broccoli slaw
- 2 grilled chopped chicken breasts
- 2 cups red grapes- cut in half
- 1/3 cup slivered almonds
- Oriental Ramen Noodles – crunchy (not cooked)
- Approx 1/4 cup crunchy flax with chia
Oriental Dressing Ingredients:
- 2 tbsp Grapeseed oil (olive oil would work too)
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
** Pile all the ingredients together
Mix until all salad ingredients are incorporated.
Pour dressing over top and mix well. Store in the refrigerator.
Monday, Tuesday, Wednesday, Thursday, Saturday = Crossfit
I may run a couple days if I can. I am not good at running but I am trying to get back into it little by little. By little I mean run a mile or two! Yesterday Lily and I walked 2.3 miles 🙂
