I hope everyone had a good weekend!
I had a very busy weekend and had a lot to blog about so I am coming at you with my weekly meal plan a little bit later than usual, but I still wanted to share because I have some good eat’s coming your way!
Here is my Weekly Meal Plan: (tentative)
Sunday: Spaghetti Squash Lasagna (Skinnytaste)
Monday: Laura’s Lean Meatloaf
Tuesday: Cod with Skinny Broccoli and Cheese Casserole
Wednesday: Chicken Alfredo for Boys (I work late, so I’ll prob pack something for dinner)
Thursday: Wildtree Pork Tenderloin (in crockpot)
Friday: Taco’s and Taco Salad
Saturday: Chicken Quesadillas
I also did some meal prepping such as:
- Chopped Lettuce and Veggies for salads
- Baked Chicken and Tuna Patties
- Chopped Fruit
- Spaghetti Squash
I plan on doing Crossfit on Monday, Tuesday, Thursday, Friday, and Saturday and I might attend the Olympic Lifting class on Sunday. Olympic lifting is a class where we focus on one major lift (clean, or snatch, etc) and we work on form and repetition because the lifts are so complicated. (Thank you Kirt for teaching, you are the best!)
I bring you another great recipe from Skinnytaste, which is where I get a lot of my recipes from when I don’t know what to make for dinner!
So for dinner tonight we had Spaghetti Squash Lasagna.
- 2 cups marinara sauce
- 3 cups cooked roasted spaghetti squash
- 1 cup part skim ricotta
- 8 tsp parmesan cheese
- 6 oz part skim shredded mozzarella
I only had about half of the mozzarella, but I made do with what I had.
I also made mine in one large baking dish instead of individual ramekins.
- First layer 1 cup of marinara sauce on the bottom of the baking dish
- Place spaghetti squash over sauce.
- Then add layers of 1 cup ricotta, 4 tbsp parmesan and 3 oz. mozzarella cheese
- Top with another cup of marinara sauce
- Add remaining cheese to the top!
Bake for 15 minutes covered, and then uncover and cook an additional 5 min.
PS. I saw this on Courtney’s Blog last week and I thought it was hilarious. I hope you get a little chuckle.
I like to be creative in the kitchen, and I also love getting inspired from recipes on Pinterest, although this is what happens most times:
My mom has like 1,000,000 different pinboards and I have a million recipes on my “yummy” page, but do you think I have made half of them!? NO. I wish I had the time though.

I woke up Friday with all intention to go to work and have a great Friday. Great meaning as good as I could make a 10 hour work day! I started driving to work and soon after my temperature gauge on my car was on HOT HOT HOT and ding ding, the light came on. So I pulled over praying that I wouldn’t see smoke from the hood of my car!
So I went back home and immediately took my car to the shop. I waited pretty much all afternoon for it, and 500 dollars later my leaking water pump was fixed, boo! Thank God it’s Friday or I might have gone crazy. We also got some other not so fun news 😦 You know the saying, when it rains it storms, well that’s what it’s been like at the Puckett household.
I don’t mean to be a Debbie Downer because I know there are worse things that happen, like the Boston Marathon, that still has my heart aching. I was glued to the TV all day yesterday! I know things happen, not always when we want them to, so I try to be thankful for what I have. Prayers still go out to Boston!
On to a happy note, I had an awesome lunch! This was my packed lunch for work so I just unpacked everything and ate it on a normal plate instead of out of a container.
Am I a fan of HUGE salads or what!? Sorry this looks like all the other salads I’ve had all week, but they are so darn good, and I am officially out of goat cheese.
I also used the leftover tuna from yesterday to make a tuna patty. Ketchup please!
Tuna Patty: (makes one)
- 1/2 can tuna
- 2 tbsp almond flour
- 1 egg white
- salt and pepper
- garlic seasoning
- Any other seasoning you like
- Form into a patty, Cook on stove top in Grapeseed oil or coconut oil on each side for about 3-4 minutes.
Do you ever have those days when you pretty much live in your kitchen. That was me on Friday!
Snacks for the day:
- Pecans, they are my favorite, other than cashews and almonds.
- Peanut butter protein balls
- Kind Bar- Dark Chocolate Sea Salt + Protein
And this little guy thinks he can just do whatever he wants around here….NO doggies allowed on the couch. He’s so cute though.
The Box’s First Official WOD ‘n’ Wine:
The Crossfit evening class was girl’s only! This was our workout:
I used 65 lbs for the Push Press and it was exhausting! This was the longest 12 minutes ever! The goal was to get 3-5 rounds in 5 minutes and I got 3 rounds plus 5 Push Press, so almost 4 rounds, so I hit the target, and all the other girls did too!
WOD: Boy was it brutal!
Then the FOOD & WINE…
There was meatballs, veggie trays, chips and salsa, fruit, and dips galore!
I made the fruit salsa AGAIN, this time with added kiwi. it was the bomb! You will also see paleo dark chocolate bark, with BACON. Who would have thought, bacon….
The girls…We were ready to dig into some food and wine (or beer).
