On Saturday I did some experimenting in the kitchen for sure! We went to my mom’s house for dinner for one last get together before my sister left for training for the police academy. She will be back on weekends only for the next 18 weeks! We are crossfit buddies so I am definitely going to miss her!
Anyways, for dinner we grilled burgers and had tons of other food, like always at my moms!
Mom’s Pasta Salad
And I made dessert:
Paleo Strawberry Shortcake
- 3 Eggs
- 3 tbsp honey
- 2 tbsp melted coconut oil
- 1 1/2 Cups Almond Flour
- 1/4 Cup Coconut Flour
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
Mix wet ingredients and dry ingredients in separate bowls. Add dry to the wet. It will be a little clumpy. Form into biscuit like patties and place on parchment paper on a baking sheet. Bake at 350 degrees F for 15 minutes.
These shortbread biscuits are slightly higher in fat, but low in carbs and sugar and they taste great! With only 14 grams of carbs and 8 grams of sugar, paired with strawberries you have a light and healthy dessert! They also have almost 8 grams of protein, which you will not find in any other desserts!!
For the strawberries:
Cut up 3 cartons of strawberries into large chunks and place in a bowl.
Leave one cup of strawberries separate and cut those into smaller chunks. Drizzle with 1 tbsp honey and 1 tbsp of lemon juice.
Mix all together and refrigerate!
Top shortbread with strawberries and cool whip and enjoy!
