Good Morning!  Happy Friday!

If you follow me on Instagram you have probably noticed the past couple morning I have hit the repeat button.  I’m sorry to be so boring, but Wednesday and Thursday I had pancakes for breakfast.  These weren’t your average pancakes though.  These were amazing protein pancakes with a twist!

You have probably seen my blueberry protein pancakes before, (because I eat them at least once a week) and sometimes I even eat them in the car!  Who eats pancakes in the car seriously?  Only me, I guess.


Instead of just protein powder and egg whites I decided to add a little bit more substance to these pancakes and it worked!  It kept me full for about 4 hours.  That is a long time for me.

Here are the recipes:  Both turned out well!

Blueberry Double Protein Pancake:

Double the Protein, Double the Fun.  Protein= Oats, Cottage Cheese, Protein Powder! POW!


The first batch I made went like this:

  • 1/4 cup oats
  • 3 egg whites
  • 1/2 cup cottage cheese
  • 1 scoop protein powder

** Mix in a blender until smooth.  Pour batter into skillet and flip away!  Top with syrup and more blueberries 🙂

Batch 2:


  • 2 tbsp oats
  • 3 egg whites
  • 1/4 cup cottage cheese
  • 1 scoop protein powder
  • splash almond milk

** Same Directions as above.  Topped with crushed walnuts and a few blackberries.

You need to try this protein packed breakfast asap.

You could also top these with melted Nikki’s Coconut Butter!  That will happen 🙂
