Anyways, So you probably know that I have an obsession with carrot cake by now! It is my all time favorite dessert. When I was growing up cheesecake was my favorite, and although I still do love that, carrot cake takes the number 1 spot!
On Saturday my friend and I went biking at the Loveland Bike Trail. I can’t believe this was the first time I got my bike out all summer! We stopped in the little cute town of “downtown” Loveland about 8 miles in where there were shops and restaurants and of course there was a cupcake shop!! I wanted to just skip lunch and head straight there (but I didn’t).
Of course I got the carrot cake 🙂 #treatyoself
Ever since then I have been craving carrot cake, but I know I can’t eat one of these every single day so I decided I would try to make some healthy carrot cake protein balls in hopes to satisfy this craving!!
Carrot Cake Protein Balls
Ingredients:
- 1/2 cup oats
- 6 oz. shredded carrots
- 1 scoop vanilla protein powder
- 2 tbsp coconut flour
- 1 tsp cinnamon and 1/2 tsp nutmeg
- 2- 3 stevia packets
- 1/2 cup applesauce (no sugar added)
- 2 tbsp coconut almond butter (if you don’t have this you could use regular almond butter, peanut butter, or coconut butter)
- 1 tbsp coconut oil (melted)
- 1/4 cup chopped walnuts
Preheat oven to 350 Degrees F. Mix everything together in a bowl. Roll into balls and bake for 15 minutes.
I rolled some in unsweetened coconut and they were fabulous. I figured you could also flatten these and make them into cookies. I decided I would do this to a few and then I drizzled them with coconut butter icing! #YUM
For the Icing:
- 1 tbsp coconut butter
- 1 tbsp vanilla protein powder
- water
Mix until desired consistency and drizzle over cookie. Enjoy!
Just because they are healthy doesn’t mean you have to eat 5 Sara!! GEE.

good…I have to admit they are pretty tasty. THey are kind of “rich” in a way. So I usually only eat one at a time.

Totally carrot cake obsessed here too!!! I’ve made every variation of carrot cake under the sun (carrot cake popsicles, oatmeal, waffles…) but have yet to perfect the perfect carrot cake recipe. Must get on that! In the meantime these are perfect 🙂

Oh these carrot cake balls sound so good! I love carrot cake but it’s not usually one of the healthiest options, this sounds like a great way to get in the great carrot cake flavors without the nutrition label that comes with most carrot cakes.
