Good Morning! Happy Friday!
If you follow me on Instagram you have probably noticed the past couple morning I have hit the repeat button. I’m sorry to be so boring, but Wednesday and Thursday I had pancakes for breakfast. These weren’t your average pancakes though. These were amazing protein pancakes with a twist!
You have probably seen my blueberry protein pancakes before, (because I eat them at least once a week) and sometimes I even eat them in the car! Who eats pancakes in the car seriously? Only me, I guess.
Instead of just protein powder and egg whites I decided to add a little bit more substance to these pancakes and it worked! It kept me full for about 4 hours. That is a long time for me.
Here are the recipes: Both turned out well!
Blueberry Double Protein Pancake:
Double the Protein, Double the Fun. Protein= Oats, Cottage Cheese, Protein Powder! POW!
The first batch I made went like this:
- 1/4 cup oats
- 3 egg whites
- 1/2 cup cottage cheese
- 1 scoop protein powder
** Mix in a blender until smooth. Pour batter into skillet and flip away! Top with syrup and more blueberries 🙂
- 2 tbsp oats
- 3 egg whites
- 1/4 cup cottage cheese
- 1 scoop protein powder
- splash almond milk
** Same Directions as above. Topped with crushed walnuts and a few blackberries.
You need to try this protein packed breakfast asap.
You could also top these with melted Nikki’s Coconut Butter! That will happen 🙂

Here I go with another WIAW– This one will be a little bit different but I want to highlight a couple of my favorite meals over the past couple days!

Yesterday I had two pieces of bacon, three of these egg muffins, and some strawberries! Breakfast of champions.
Do you ever browse through the website Bodybuilding.com? I love it! There are so many different recipes and workouts including some good articles too.
The other day I was going through recipes trying to plan my weekly meals and I found this tuna salad recipe. I never know how to dress up tuna because I hate mustard and mayo. I know I am weird! I literally spent an hour going through all the recipes on the website and printed off a ton!! How old school is that? But I wanted to keep them with my grocery list.
When I came across this recipe I was so excited to try it. I usually just throw some avocado and a hard-boiled egg in some tuna with some salt and that’s it, tasty but boring.
Here is an awesome tuna salad recipe that I had for my afternoon snack.
Apple Tuna Salad – adapted from BodyBuilding.com
Ingredients: (Makes 2 servings)
- 1 chopped green apple
- 3 tbsp dried cranberries
- 2-3 tbsp chopped red onion (I didn’t really measure so this is a guess, feel free to use more if you love it.)
- 2 cans of tuna
- 1/2 avocado
- Dressing: 1 tbsp olive oil and 1 tbsp balsamic vinegar
** Toss the first 5 ingredients together in a large bowl. Combine the olive oil and balsamic vinegar to make a dressing and drizzle over top of salad. Enjoy!
The sour apple and the sweet cranberries combined with the red onion really give your mouth an explosion of flavor. I was surprised how much I liked the combination of ingredients.
Dinner On Monday: We took Alec out to eat for his birthday and I got the broiled seafood platter. YUM!
I saved the fish for lunch but the favorite part was the veggies! They were so delicious.
Alec got 1 lb of crab legs, his favorite! Eric and Alec never have a serious smile!
He ate all of them!
He also got a huge chocolate pie! I ate the crust from his piece lol. Thankfully I don’t like chocolate pie or this could be a bad situation. With such a sweet tooth you wonder why I don’t like chocolate pie, but I just don’t 🙂
Dinner on Tuesday was another story: Who says you can’t have breakfast for dinner! I never get sick of my blueberry protein pancakes!
