Good Morning and Happy Monday!
Starting Next Week (hopefully, as long as I get my blog switched over!) I will be hosting a new link up called Game Day Eats And Treats. I would love to see what health-ier recipes you all are cooking up on the weekends for game day!
I’ll most likely post these recaps on Monday’s so be looking out for it soon, and remember hashtag #gamedayeatsandtreats 🙂
I was supposed to have a 4 day weekend but I picked up Saturday for some extra cash! I have to save up for my weekend trip to Chi Town with Becky, Katie, Carly, and Alisha! Woop Woop! I love Chicago!
Anyways, I’ll give you a little weekend update starting with Friday. It was a good day although I did tons of Laundry, womp womp, probably the worst house chore ever. besides cleaning bathrooms.
I woke up and ate breakfast of course!!
Coconut Protein Pancakes
- 1 scoop vanilla protein powder
- pinch of baking soda and salt
- 1 egg white
- 1 stevia packet
- 1 tbsp coconut flour
- 1 tbsp unsweetened coconut
After breakfast I went to Crossfit, which didn’t really LOOK that hard, but the WOD’s can be very deceiving! I was TIRED after this one!
After Crossfit I came home and cleaned, cooked, baked, and did some shopping!
Ok so first the cooking:
Brussles Sprouts, apple, and chicken apple sausage. First I tossed in the brussels sprouts with some garlic and sea salt. Then I added the chopped apple with cinnamon and finally the chopped chicken apple sausage and cooked until apples were soft and brussels sprouts had a nice crispy crunch!
Then the Baking:
Healthier Pumpkin Cornbread Muffins
- 1/2 cup cornmeal
- 1/2 cup whole wheat flour
- 1/2 cup pumpkin
- 1 egg whisked
- 3/4 cup almond milk
- 1 tsp cinnamon and pumpkin pie spice
To sweeten it up a bit:
- 1 tbsp honey
- 1 tbsp brown sugar
- 1 tbsp stevia or stevia blend sweetener
I started with stevia blend and realized I didn’t like the flavor alone so then I added brown sugar, still wasn’t satisfied, and then added honey. Finally got it!
Bake for 15-20 minutes at 350 Degrees F. Makes 10 muffins. These went great with my homemade chili!
Finally, the shopping:
I love the fall colors of the m&m’s
Glass Pumpkins- so cute.
And my favorite Clif bar.
I don’t eat these a lot but when I crave one, it’s definitely the carrot cake.
I went to work bright and early at 7 am.
My morning turned up when I had the best pumpkin donut EVER from Reality Tuesday’s Cafe. I rarely eat donuts, but I think I might make a stop there next week and get another one of these!!
And then On the way home from work I got rear ended…what a day! 😦
I figured I would blow off some steam at the gym, and that’s exactly what I did!
I refueled post workout with a protein Nuttzo ball before dinner. My biceps were on fire on Sunday.
How was your weekend? Do you love pumpkin? What about donuts??
Do you like working your upper body or lower body better?
If you google “fran” you may find this:
But this is NOT what I am talking about!
I am talking about crossfit FRAN and she is a benchmark WOD that not too many people love.
I’ve been doing crossfit for about 7 months now and I just did Fran for the first time last month. It is a workout that people dread and hate thinking about, but needs to be done from time to time.
21 – 15 – 9
The Prescribed weight for men is 96 pounds and women is 65 pounds (RX). When I was contemplating this workout I was trying to decide if I wanted to complete it with 65 pounds, which would probably take me 20 minutes or drop the weight and do the workout in a timely manner 😉
I decided I would do the Prescribed weight even if it took me longer so next time I would have something to base my score on. I was winded during the first set up thrusters and I thought to myself “this is going to take me forever!”
Of course I didn’t complete Fran in 10 minutes but I did complete it in 12:07! I was very proud of my time!
I can only get better next time!
What workout are you proud of recently?
