Good Morning!
I didn’t have a whole lot to write about today since I worked 12 hours, but Last night I had a sweet tooth of course, like always! So I decided I would make some “healthy” hot chocolate!
Here’s What you need:
- 1 cup unsweetened vanilla almond milk
- 1 small piece of dark chocolate
- 1 stevia packet
- 1 tbsp chocolate PB
- 1- 2 tsp of cocoa
How It’s Done:
- First Melt dark chocolate in Microwave for about one minute.
- Warm the Milk in a mug separately.
- Add Hot milk to melted chocolate and stir.
- Add in all the other ingredients and microwave for another minute or so!
And your final product: Healthified Hot Chocolate!
Add a dollop of lite whip cream, yum.
A Paleo Pumpkin Banana Muffin on the side, what could be better??
These muffins are great for breakfast, snack, another snack, part of dinner, or dessert!

Monday was full of tires and sandbags!
You know it’s a slow start on a Monday when I need coffee, because I NEVER drink coffee. It was one of those days if you know what I mean. Since I took a lazy Sunday away from the gym I knew I had to hit it hard after work, especially since I had like 18 pieces of candy at work! I actually got off an hour early so I got my workout in and was home by the time I would usually get home from work, woo hoo!
This is the workout that I made up from earlier in the week.
WOD= Workout Of Day
AMRAP= As Many Rounds As Possible
HRPU= Hand Release Push Ups
I did 5 Rounds + 5 HRPU in 12 Minutes. The push ups started getting super hard around the 3rd round and my legs were burning after the lunges. Feel the Burn!

Dinner:
I was so undecided on what to eat when I got home from crossfit so I just threw a bunch of random stuff together. The other day I had half of a sweet potato and I saved the other half so I decided to warm it up and throw some cinnamon on it. YUM.
Then I topped it with some turkey sausage and 2 scrambled eggs. Topped it all with some mozzarella cheese.
This picture is wimpy compared to what you are about to see!
After dinner I made some Protein Cookie Dough Crumble inspired by StuftMama
Protein Cookie Dough Crumble
2 servings
2 tbsp coconut flour
1-2 tbsp almond milk (unsweetened vanilla)
2 tbsp unsweetened applesauce
pinch salt
1/8 tsp baking powder
1 stevia packet
1/2 tsp vanilla extract
1/2 scoop vanilla protein powder
Mix all ingredients together. Cover and chill for at least 30 minutes.
The original recipe called for liquid stevia drops which I don’t have but I really want to buy some! I used regular stevia, but you could probably use any kind of sweetener that you like, or even honey.
This is the first time experimenting with this, but you may have to experiment too 🙂 You made need more or less liquid to get the consistency that you want.
I must have had a major sweet tooth because then I decided this crumble would be great on my Protein Brownie For One.
Add any other toppings that you like:
