A while back I attended Blend Retreat 2013 and I won some great products such as protein bars, protein powders, pre workout drinks, dark chocolate goodies, and coconut oil, etc. I also won 3 tubs of Nuttzo! which was by far one of my favorites!
I couldn’t believe it because I had been wanting to try this stuff for a very long time. Needless to say, I was pumped when I got to bring these fantastic goodies home! Well, Yesterday I shared with you that I enjoyed a few Nuttzo Protein Balls and I promised the recipe would be on the blog today so here it is!
Protein Nuttzo Balls
- 3 scoops vanilla protein powder (I used About Time Protein)
- 1/4 cup almond flour
- 1/4 cup applesauce (no sugar added)
- 1/4 cup Nuttzo (NP- No Peanuts)
Mix all ingredients together and roll into balls. Refrigerate and enjoy!
Since my workout on Saturday where I ripped my hands doing pull ups, I decided I would try to let my hands heal I decided I would do some workouts at home this week. On Tuesday I did a workout with different exercises, each of which I did 50 reps! It took me about 30 minutes (The bachelorette that I DVR’d on Monday was on too, if you know what I mean.) But don’t get me wrong I got my sweat on!
I call this one the Fab 50!
This can easily be done in your living room with NO equipment!
Also while I was at BLEND I met some great people, including some of the hosts who sponsored the retreat. One of the most fun people I could ever meet was Britney who worked with The Laughing Cow. Recently Britney sent me a Summer Essential Package with lots of goodies and smart snacks!

Along with three cheese flavors: light garlic and herb, light queso fresco and chipotle, and light creamy swiss, they also sent me multigrain wheat things, a water bottle, and a sweet cooler that I can pack my snacks in for the pool 🙂

The Laughing Cow® Community Leaders Sarah Dussault and Tina Haupert came up with two weeks of activities, snacks and tips to reshape your swimsuit season mindset! I already follow some of these but I also got some other great ideas like adding planks into my workout and aiming to drink a gallon of water. (The water thing is already part of my getting back on track plan.)
My husband loves the Queso Fresco and I’m thinking I could make a healthy queso dip with it!
And my favorite that Is Cinnamon cream cheese!
I love adding it to my waffle egg sandwiches, and spreading it on toast with bananas or strawberries.
I also love the garlic and herb which I melt into scrambled eggs, and my favorite skinny broccoli and cheese casserole!

What laughing cow wedge flavor is your favorite??
It’s another WIAW (Monday) and I am going to feature what my husband and I had for dinner on Monday night because it was amazing. My husband ranked it one of my top meals ever made! You know it has to be good then!
First I will start with the:
Skinny Broccoli and Cheese Casserole- By Sara
- 3 small heads of broccoli- fresh
- 3 wedges laughing cow garlic and herb cheese
- Salt and Pepper to taste
- 2 tbsp almond flour
- 1 tbsp Italian breadcrumbs
- Slivered almonds
- 1 tbsp smart balance butter- melted
- Preheat oven to 350 degrees F.
- Fill a pan with water and bring to a boil. Add broccoli, cover and cook for about 5 minutes.
- Drain water and mix in laughing cow cheese wedges until broccoli is completely coated.
- Divide broccoli evenly into 2 mini ramekins.
For the Topping:
Mix breadcrumbs, almond flour, and melted butter together in a bowl and sprinkle over each broccoli mixture.
Garnish with almonds
Bake in preheated oven for about 30 minutes, or until top is browned. Enjoy!

It’s Grillin’ Time!
We broke out our grill for the first time this summer, yay. I love grilling. It leaves my kitchen so much more clean! I am usually a talapia girl but the other day we bought some fresh Cod so we decided to grill it, which I have never done before. Well it turned out great and I will probably be making this again next week!
Lemon Grilled Cod
Lemon Butter Sauce:
- 1 tbsp smart balance butter- melted
- 1 tbsp lemon juice
- 1 tbsp parsley
- 1 tbsp paprika
- Cut one large piece of Cod into chunks.
- Place in foil “tent”
- Pour the Lemon Butter Sauce over fish.
- Grill on high heat for about 5 minute on each side until tender and flaky
We also had a side: Summer Salad
spinach – grape tomatoes – blueberries – zucchini – pecans
I especially love fresh fruit and veggies on salads in the summer time. It is a quick, easy, and healthy side for any meal. We enjoyed ours with a Cherry Balsamic Vinaigrette
A great Meal overall!
