Helloooo and Happy Monday to you!
I hope you all had a great weekend! I know I had a busy but exhausting and relaxing one at the same time 🙂 By exhausting I mean, prowler pushes on Saturday and Snatch work on Sunday! Relaxing = time spent with family.

On to the food… I did my weekly shopping at Kremers Market, where I only got a few things, and then I got my major produce from Kroger. Produce at Kremer’s is like double the price!
I managed to pick up some important things. Here are some of them:
- Apples
- Bananas
- Strawberries
- Blueberries (finally on sale)
- Asparagus
- Broccoli
- Turkey bacon- on sale. Yes, I do eat regular bacon too 🙂
- Fresh Cod
- Eggs
- Almond Milk -vanilla unsweetened. I like the Blue Diamond Brand the Best
- 2% Milk for the boys. They hate anything else!!
- For Salads etc- Grape tomatoes, avocado, cucumber
Meal Prep:
I am trying to follow Paleo, at least some of the time, so I did some prepping based off of a diet plan I printed off. These paleo plans are SO strict! I only made a few things this weekend because it was so nice outside! It’s hard to stay in when its 70! Well anyways, I made:
Veggie Egg Muffins
- First cut up your veggies. I used peppers, spinach, and broccoli. I love these mini peppers!
- Mix your eggs, Almond Milk, and salt and pepper together in a separate bowl. I used 5 eggs and 1 cup of egg whites
- Spray your muffin tin and add in the veggies.
- Pour egg over top
- Bake at 350 degrees for about 25-30 minutes or until eggs are set
- Top with a sprinkle of cheese
Save and reheat for breakfast on the go!

Tuesday- Shrimp and Asparagus Stir Fry
Wednesday- BLT Chicken Cobb Salads
Thursday- Semi California Chicken Quesadillas
Friday- Wing it (work 12 hours)
Saturday- Talapia
Sunday- TBD

I didn’t do a ton of meal prepping on Sunday because I thought I could do some on Monday while I was off work. I did make a few things though.

On Monday I prepped:
Healthy Blueberry Muffin Bake (With strawberries and blackberries) Blueberries were not on sale 😦 — Side note: Make sure you ADD the PROTEIN POWDER lol. I left it out and didn’t realize it until I was writing this post. So of course there was only 5 minutes left to bake, so I quickly ran and put a little bit more milk and 1/2 scoop of protein powder in each one.

A Celebration:
On Sunday we had a dinner celebration for my sister who is being accepted into the Police Academy! I knew this meant cupcakes were in order! Lemon are her favorite so I quickly turned to my Babycakes book for a recipe. I only had about an hour to pull these together so I knew these would cook quickly. Each batch took about 6 minutes.
I pulled out the babycakes maker and got to work.
I made Lemon Cupcakes with Buttercream Frosting.
If anyone wants the recipe I can post it 🙂
We had an awesome Thai/sushi dinner at Teak Restaurant.

I started out with a blueberry cocktail which was awesome!
I got the house salad with ginger dressing which by the way is the best dressing ever. I also had sushi that I shared with almost everyone 🙂 It was delicious! Alec got chicken pad thai and I had a little bit of his too.
I am a huge sushi fan! Love it.
Dessert:
When I got home I had a little snack: Chocolate Rice Cake with Chunky Almond Butter, yum. It satisfied my sweet tooth perfectly!
Sad Monday Morning:
This morning I woke up and my foot was throbbing! It started getting sore on Sunday and I still went to crossfit but then today I woke up and could barely walk. It’s a little swollen too. So I decided I should probably rest. I’m sad I have to miss crossfit, especially because they are working on back squats, which is what I NEED to work on.
At least If I rest today, hopefully it will be better for the rest of the week. I’ve been icing and my mom told me to soak it in warm salt water, moms know best! So that’s what I did this morning while trying to finish my food prepping 🙂
