Good Morning and Happy Wednesday, and Hump Day 🙂
I am teaming up with Jenn over at PeasandCrayons, for another WIAW.
These are my eats from Monday! I’ve been trying to get more fruit in the mornings, but trying not to eat too much fruit later in the day which is hard to do when I buy pineapple, peaches, blueberries, and watermelon! It’s all so fresh, I just love it all!
Breakfast: Protein Power Balls and Blueberries
After running I ate a couple cinnamon walnut egg white bites before heading to the grocery store. Does anyone else LOVE grocery shopping like I do? I can’t wait for the weekends to restock my refrigerator, I know I’m weird!
While shopping I had myself a TALL, Skinny, Iced Vanilla Latte- Such a long name! It totally hit the spot 🙂 I totally downed the entire thing before my bank shot into the garbage can.
This is what it looked like if I would have gotten a picture:
Lunch: I made Round 2 of my Oriental Chicken Salad. This time it wasn’t so oriental but it still tasted great. Even better than Round 1 I think!
- 2 Servings chicken breast- cut into chunks
- 1 bag broccoli slaw
- 2-3 cups of grapes cut in half
- sunflower seeds ( I didn’t measure)
- 1/4 cup chopped walnuts
- 3-4 tbsp grapeseed oil (Again I didn’t measure, sorry)
- 1 tbsp Wildtree Opa Greek Seasoning
- Salt to taste if needed
Lunch: Oriental chicken salad with a Van’s whole grain English muffin: half with peanut butter and the other half with smart balance butter. I went back for a second serving of the salad 🙂
Afternoon snack: Strawberries with laughing cow cinnamon cream cheese and a few Pretzel Crisps.
Another snack: A couple handfuls of Quaker cinnamon oatmeal squares before crossfit.
Dinner: Jamie Eason’s Turkey Meatloaf Muffins, with a few subtracted ingredients.
Dinner came with a couple watermelon slices and a few more bites of my salad that I made for lunch.
Dessert: Coconut Banana Protein Bread with peanut butter, oh so good!
Have you been baking anything tasty lately?
Now that it’s summer, I know for me it is especially hard to turn down dessert, including Ice Cream!! I love making healthier desserts including breads, and muffins to try and hit that sweet tooth.
