BLUEBERRY PROTEIN PANCAKES
These are super easy because it is the exact same recipe as my Protein Waffles!
1 scoop vanilla protein powder (I used UMP)
1 egg white
1 tsp baking powder
1 stevia packet
Add in : Blueberries
Whisk all dry ingredients together until smooth. Really whisk away!
Slowly add in water until a batter forms.
Fold in blueberries.
Cook on each side for about 5 minutes.
You may need to turn down the heat at the end and make sure the inside cooks without burning these little guys!
Top with more blueberries and whatever other toppings you desire. I used a little bit of sugar free syrup, just a touch 🙂
This breakfast is less than 300 calories if you are wondering 🙂
Okay on to my snacks. After the gym I had my Beverly International UMP Protein shake. This is the same powder I used in the pancakes.
I had a few errands to run so I also ate a banana.
Mango Avocado BLT… Yes I said Mango, Avocado BLT, on toasted Ezekial Bread
Look at this Mama Jama
With a side of veggies with Litehouse Yogurt Ranch Dip
Eric and I had a date night finally! We went and saw Identity Thief and ate dinner at the same time! They have a reserved 21 and up section where you can order food and drinks and the seats are so much more cozy.
I got the grilled chicken sandwich with a side house salad with balsamic on the side. It was very good!
Halfway through the movie the waitress accidentally knocked over Eric’s drink and it went right in his lap! I felt so bad for him!
When I got home I snaked on some pistachios and a Chobabi bite while I packed lunches.

50 Jumping Pull Ups
50 KB Swings with 35# KB

If you are bored try these at home 😉
I just love to see these dogs faces when I am there!
Saturday night’s Dinner was Jamie Eason’s Turkey Meatloaf Muffins (with a few additions and subtractions of my own)
With Cheesy Sweet Potato Crisps from How Sweet It Is
Cheesy Sweet Potato Crisps
2 sweet potatoes, peeled
2 egg whites
1/2 cup parmesan cheese
1/2 teaspoon rosemary
1/4 teaspoon pepper
Preheat oven to 425. Set a wire rack on top of a baking sheet. Spray rack with non-stick spray. (I actually forgot this step-woops)
Grate sweet potatoes (I used a food processor) and squeeze all the moisture from them. Less moisture= crisp up better in the oven.
Add sweet potatoes, egg whites, cheese, pepper, and rosemary in a large bowl and mix until combined.
Scoop out 1 tablespoon of potato mixture (I used an ice-cream scoop) and set on wire rack. Press as thin as possible. Repeat until potatoes are gone.
Bake for 20-30 minutes, or until potatoes and dark around the edges and crispy.
Some new snacks I’ve been trying:
I finally make it to Target to get Chobani bites. I love the pineapple and caramel!
Quest Protein Bars
Sunday Morning’s Breakfast was also a hit!
I made Blueberry Muffin Bake‘s for Eric and I.
You can also check out my Protein Waffles if you need another breakfast idea… they are to die for!
Of if you don’t have a waffle maker you can make my Easy Protein Pancakes!
Topped with Crunch Peanut Butter. I love the crunch that it added!
Lunch was leftovers, which is always good for me!
Small salad (lots of veggies) with a turkey meatloaf muffin. Kept it light before going to Crossfit.
Crossfit on Sunday was a little bit more laid back, thank God. We worked on our 5 rep max deadlift.
If you are not into crossfit I am sorry for all the crossfit talk…I am just loving it!
How was everyone’s weekend!?
