Good Morning!
I took a little holiday break to myself 🙂 But I am back and ready to share my holiday weekend with you guys! I didn’t really have time to do any fancy cooking or anything this holiday but I did eat a lot of food and got to hang out with some awesome friends!
First on the agenda: On the 4th we had lunch with our good friends Nick and Lindsey who brought their baby Kinley, she is so cute! She had her 4th of July outfit on and was ready to roll!
It rained the whole day and the park by our house even flooded, so we didn’t get to spend the day at the pool like we had hoped!
Later in the evening we went to another friends house and ate lots of food and had our own fireworks show!
Some of the guys were drinking Corona and Eric made sure that he was drinking Bud Lite, “An American Beer”
Eric also loved their dog! He’s awesome.
I had 3 of these cookies, they were sooooo good! I won’t tell you that I may or may not have had a belly ache that night!
Drinking and fireworks are not a good combination! But we had such a blast even though it started to rain again later that night, and I got hit in the eyebrow with some flying debris!
Saturday:
I went to crossfit after work and did the scheduled WOD which was pretty brutal. Combining burpees, snatches, box jumps, thrusters, and chest to bar pull ups was pretty tiring. I am always nervous when I see such a hard workout but then I am always happy after I complete it!
After crossfit I went to the store and stocked up on my protein powder. I got two pounds plus tons of free samples. I think I am set fora while.
I had a protein shake after the workout so I wasn’t too hungry for lunch but I did end up making a pretty tasty snack plate!
The new tomato basil brown rice triscuits are my new favorite cracker!
Sunday:
I was going to go to open gym and work on snatches but we went to first watch for brunch so I didn’t have time. I didn’t want to take the day off so I went to the gym and did some EASY cardo/core work. I didn’t really push myself like I wanted to but at least I got a good sweat in.
Sunday night I Made Paleo Apple Cinnamon Muffins with Nikki’s Coconut Butter melted on top 🙂
After a long weekend with lots of sweets (cookies, candy bars, sweet and salty trail mix, etc) I am ready to get back on track with some good meals!!
So here is my (tentative) weekly Meal Plan:
Monday: Salmon Cakes with Mango Cilantro Salsa
Tuesday: Laura’s Lean Meatloaf ?
Wenesday: Chicken Fajitas with Guacamole
Thursday: Loaded Baked Potato Chicken Salad
Friday: Cilantro Turkey Burgers with Guacamole
Saturday: TBD
Sunday: Pizza at Mom’s for Alec’s belated b-day party

Looks like a wonderful holiday weekend…I am going to have to try those Paleo Apple Cinnamon Muffins…They look delish!

I’m glad your eyebrow wasn’t burned off by the firework! And I totally don’t blame you for eating three of those cookies. They look beyond amazing!!

Those cookies look beyond delicious! I don’t blame you for eating a couple ;). Lots of good stuff on the meal plan this week! Those salmon cakes with mango cilantro salsa are calling my name. Pinning them right after I post this comment!

I love the emphasis on drinking an American beer! 😉 I had a couple of Coors Lights this past weekend to celebrate, too!

Glad you had a nice weekend, I was so happy it did not rain here because its been raining for the past month (like everyday). We needed a sunny break. Everything looks so good especially ~ those cookies!!!!! My one American Craft Beer was a Blue Moon! Happy Monday! 🙂

I would freak out if my face got hit by firework debris!! Glad you’re okay 🙂 We didn’t do anything too crazy – invited friends over to watch the fireworks show from our condo and drank and ate allllll weekend, haha!

I was totally shocked, like what the!?! We also ate and drank a lot, even though I did skip on the alcohol. My chocolate chip cookies made up for it though!
