You hear my talk about getting enough protein in your diet, especially if you train a lot! I love doing crossfit and I usually refuel with a protein shake afterwards, but I also love EGGS!
One egg has:
- 70 calories
- 5 grams of fat
- 0 sugar
- 6 grams of protein
- Amino acids
Word around town is that egg yolks increase our cholesterol levels but one study showed that there was actually no effect on blood cholesterol levels at all. In another recent study, it was shown that whole eggs actually increase our HDL which is our “good” cholesterol level. Meredith Melnick- HuffingtonPost
Some other facts you may not know about Egg yolks are they provide:
- B-complex vitamin choline- “happy hormone”. This also aids in fetal brain development if pregnant women eat them.
- Protect against vision loss
- Sulfer- “necessary for the production of collagen and keratin, which help create and maintain shiny hair, strong nails and glowing skin.”

Egg Sandwiches such as:
- Egg Waffle-wich- These are Van’s Power Waffles. The other day my step son Alec thought they were regular waffles, put them in the toaster, and then tried them and said “these are disgusting”. That’s an 11 year old’s thought’s on “healthy waffles” for ya! Me- I love them!
- English Muffin (paleo or not) – I also love Van’s English muffins, any whole wheat brand, or you could try making this Paleo English muffin!

I love eggs over easy! The more yolk the better. I always forget about making quiches for dinner. Got to add that onto my menu plan.

Runny eggs are one of my absolute favorite meals. I’m such an egg lover and eggs without the yolk seems like such a waste!

I love eggs! I mainly just scramble them, but I like to add them to Asian rice dishes (my po’ girl take-out) and am having a hard boiled one with snack every day this week.

I enjoy scrambled eggs the best, with veggies and beans. In fact, that’s what Connor & I made for dinner yesterday — scrambled eggs, black beans, veggies, avocado, and cheese. Erhmergerd. Hungry.

Yum! I go on kicks where I eat hard boiled eggs every day and then times when I go a month without eggs. They’re so easy I need to remember to eat them more often!

I can’t believe this is what you posted about today…. I am having a hard craving for eggs and this makes it even worse! Ahhhhh!!! I love them in all those forms you shared, though the egg cupcake would be a new dish to try! Definitely a good idea. I have hard boiled eggs all the time (like 3 a day, yikes!) and was thrilled when I discovered the same information you shared about eggs not being bad for you. I hate that in high school, I was told not to have more than 4-5 per week. Um, what? How about 4-5 per day? Kidding, but really….

Great round-up of ideas!! My favorite ways to enjoy eggs are hard boiled, “dippy” eggs on top of a salad and an omelet stuffed with tons of veggies and salsa.

Yes – I love eggs too! Especially for a quick, easy and healthy dinner. I love egg white salad and egg muffins!!

Oh eggs ❤ Perfection in a little package. I love eggs over-easy, scrambled, or cooked into my oats. That being said… I don't think I've ever come across any way that eggs don't taste good… especially when ketchup is involved 😀

Ahh, so many great egg recipes!!! My favorites, though, are the waffle-wich and anything that is topped with a dippy egg and avocado!

I used to not enjoy eggs as much as I do lately. I actually only ate scrambled egg whites for years just because I wasn’t a fan of the yolk. However, now I eat them hard boiled, scrambled, in muffins, fried, over greens…. love them!

I love making an egg-hash-veggie scramble. Basically scramble some eggs and throw in anything in my fridge that looks like it would be good in eggs! Love the post, and the blog too!

Love these ideas. I eat eggs a lot too in order to get in some protein. Usually, I’ll either scramble them and eat them with cheese or make a good old fashioned egg salad sandwich with some (not so old fashioned) sriracha sauce on top. It’s delicious!

I can’t wait to make some of those mini quiches. I am a pretty standard hardboiled egg white eater, but maybe now I should stop being so yolk prejudiced!
