Good Morning!
I have lots of good new eats and recipes to share with you guys today! I’ve been experimenting with different protein mug muffins and fun desserts.
Check them out:
Pesto Chicken Burger
1 can chunk chicken – 1 tbsp basil pesto – 1/4 tsp garlic powder – salt and pepper – 1 tbsp coconut flour – 1 egg white
Mix, mix mix, and form into a patty. Heat Oil in a pan on medium heat. Place burger in the pan on the stove top and cook for about 3-4 minutes on each side until a crispy crust forms!
Blueberry Mug Muffin
1 scoop vanilla protein powder – small handful of blueberries – liquid stevia (may omit) – water ( I never measure the water, I just add it until a smooth consistency forms) My guess it is about 3 tbsp. Fold in blueberries last! Microwave for 90 seconds. Top with crushed walnuts, or any other kind of nut that you prefer.
Healthy Broccoli Salad
1 bag fresh broccoli – 2-3 cups of grapes, cut in half – Slivered walnuts (prob 1/4 cup) – 1/4 cup dried cranberries – 1/4 cup sunflower seeds – 5 slices turkey bacon (cooked, cooled, and crumbled)
Dressing: 1 container (5.3 oz) plain greek yogurt – 3 packets stevia – 1 tbsp apple cider vinegar.
Mix dressing and pour over salad. Mix well.
Grilled Peaches
Cut peaches in half – Grill on low heat for about 5 minutes on each side.
Sprinkles with cinnamon and honey.
Top with walnuts and whipped cream
Stuffed Peppers
I was inspired by this Recipe.
Brown 1 lb Laura’s lean ground beef in a pan with red onion and garlic. (1/4 red onion, 1 tbsp minced garlic)
Pour off grease, add in seasonings: oregano, thyme, salt, pepper, 1/2 cup pizza sauce, tops of bell peppers (chopped)
Scoop meat mixture into bell peppers and bake for 30 minutes at 400 degrees. Top with mozzarella cheese and bake 3-5 more minutes until cheese is melted!

- I try to stay away from artificial sweeteners, although I do have a diet drink every once in a blue moon. I usually don’t drink pop and if I have iced tea I get unsweetened with a lemon 🙂 You see lots of hype about aspartame and sucralose, but Are Artificial Sweeteners Really Going To Kill Me?

I’ve been wanting to grill peaches! They look great 🙂 And I like the idea of a chicken burger. I always keep canned chicken around so that could be an easy meal.

I have grilled pineapple before but never peaches – yum! I have a recipe for beef stroganoff that I am excited about later this week! Also made a batch of fro yo bars that I have been eating for breakfast this summer.

Grilled fruit with vanilla ice cream is so good! We bought peaches to grill a few weeks ago but then ate them all before we could grill them! Ha! Hoping to go to the farmers market this week to get some more! Love the chicken pesto burger!

Mhmm those grilled peaches look like the perfect summertime dessert! I’ve been using our grill much more often lately, so they would be the perfect thing to throw on! I’m thinking with a side of vanilla ice cream… YUM!
